I wanna dance by the water ‘neath the Mexican sky, and drink some margaritas by a string of blue lights. I wanna listen to the Mariachi play at midnight, are you with me, are you with me? *Turns music down*. Okay so I’m not heading to Mexico anytime soon but it sounds like a trip to Canberra’s newest bar, Cabo, might be the next best thing. 

They had us at tequila, margaritas and tacos! The team at Cabo promise to take you to a place where tequila reigns supreme. You might even feel the sand between your toes and the sea breeze in your hair if you close your eyes while sipping on their boozy offerings. Can you see imagine yourself here for after-work drinks, intimate evenings, or late-night revelry? I can!

Their menu is small but the selection of tacos, oysters, corn ribs, nachos and other tasty snacks sound like the perfect accompaniment to their margaritas, tequila and mezcal flights.

They even have tacos platters and you can build your own margaritas! If you love margaritas as much as we do, you’re going to looooove this.

How does it work you ask? Well, you pick your tequila from a special curated list, choose your style, and select your salt to create your ultimate margi experience. If you feel like living life on the edge, you can spice it up with a wood-fired maguey larvae chilli salt, or maybe you’d prefer the wood-fired chapulin (grasshoppers) chilli salt? If you’re not feeling risky, you can keep it simple and salt your margi with four other spicy combos.

Beyond its exceptional tequila and food offerings, Cabo oozes modern coastal vibes with a neutral colour palette, organic aesthetic and a beachy soundtrack to put you in that holiday state of mind.

Let’s not forget the sangria soltice from 4pm on Sundays. Throw down $75 per person for a 90-minute session and you’ll receive bottomless jugs of house-made red and white sangria, with shared plates of guacamole, corn ribs, chorizo and churros.

With communal high tables, cosy bench seating and spots to perch up at the bar, you’ll soon feel like you’re part of the family.

Cabo is the newest venture for Lala Hospitality, with its award-winning sister bars Molly, Highball, Amici Wine Bar & Deli, 88mph and Bleachers Sports Bar.

If reputation is anything to go by, another unforgettable experience is guaranteed at Cabo.
