Homemade granola

Eat Canberra

I had a craving for granola this morning and was going to go to the shops to buy some BUT I had everything I needed in the cupboard so I made it instead. So yummy, so delicious and there are so many things you can do with it! It’s also simple and if you buy the ingredients in bulk you can make lots of batches and it can work out to be cheaper then buying it already packaged. 

You need:

1/2 cup pure maple syrup 
1/2 cup coconut oil (melted)
1/2 tsp vanilla paste
1 tsp cinnamon
1 cup brown rice puffs
3 cups oats
1/2 cup organic quinoa flakes
1/2 cup pumpkin seeds
2 tbsp sesame seeds
2 tbsp chia seeds
1/2 cup coconut (whatever you have in the cupboard)
1/2 cup chopped nuts of choice (I used a combo of pistachio and cashew nuts)
1/2 cups dried fruit (optional I didn’t add any because Mr Eat Canberra isn’t a fan but I love granola with dried figs)

What now?

1. Heat oven to 150C/fan or 130C/gas. Mix the honey, maple syrup, oil, vanilla paste and cinnamon in a big bowl until well combined.
2. Add all of the ingredients except the coconut and dried fruit (if using) and mix until well combined with wet ingredients. If the mixture isn’t wet enough then use more coconut oil.
3. Line two trays with baking paper and divide the mixture between the two trays. Spread evenly and bake for 15 minutes then mix in the coconut and dried fruit and bake for a further 15mins or until lightly golden. Keep your eye on it so you don’t overcook it.
4. Tip the granola onto another tray to cool. Once it’s cool put it in an airtight container.

Use it as however you want to. I love to add mine to acai bowls or with fruit and yoghurt.

Note: Double the recipe to make more! If you don’t have quinoa flakes or puffed rice just use oats. I just used them because they were in the cupboard but puffed rice make a nice addition to the granola.
