I’ve been so busy lately and I haven’t been in the kitchen much. In celebration of the long weekend I decided to make Mr Eat Canberra a special dinner of Oysters Kilpatrick and Mussels in tomato and chilli broth with crusty bread. Of course no meal is complete without dessert so I whipped up a baked strawberry swirl cheesecake. It’s an easy and delicious dessert that’s best made the day before and can be eaten for several days after you’ve baked it. It looks pretty and it’s not too sweet. This deliciously indulgent cheesecake is perfect for special occasions or a dinner party. It doesn’t require any baking and is quick and easy. I made this one at Easter so I added some Easter eggs and a bunny. Grated Toblerone or drizzled melted chocolate would do the trick and make it look pretty. I added whole caramello Easter eggs in the filling for the surprise but you could add anything! Pieces of rolo or oreos would be yummy.
